Macaroni and Cheese Salad



The creamy pasta, crunchy vegetables, and sour pickles in this salad make it a delicious take on the classic macaroni and cheese.

Ingredients:

  • 2 cups cooked macaroni
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced dill pickles
  • 2 tablespoons pickle juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

In a large mixing bowl, combine the cooked macaroni and shredded cheddar cheese

In a separate bowl, mix together mayonnaise, diced red onion, diced celery, diced red bell pepper, diced green bell pepper, diced dill pickles, pickle juice, Dijon mustard, salt, and pepper

Pour the dressing mixture over the macaroni and cheese

Toss to coat all the ingredients evenly

Chill the salad in the refrigerator for at least 1 hour to allow the flavors to meld

Before serving, garnish with chopped fresh parsley

Paleo Instant Pot Beef Stew



A hearty and wholesome Paleo beef stew made in the Instant Pot. This recipe is gluten-free, dairy-free, and packed with flavor. Perfect for a cozy, comforting meal.

Ingredients:

  • 1
  • 5 lbs grass-fed beef stew meat
  • 2 cups beef bone broth
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 sweet potato, diced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp coconut oil

Instructions:

Set the Instant Pot to 'Saut' mode and add coconut oil

Once the oil is hot, add the diced onion and minced garlic

Saut for 2-3 minutes until they become fragrant

Add the beef stew meat and brown on all sides for about 5 minutes

Pour in the beef bone broth, dried thyme, dried rosemary, salt, and pepper

Stir well to combine

Add the sliced carrots, chopped celery, and diced sweet potato on top of the meat mixture

Do not stir

Close the Instant Pot lid and set it to 'Manual' mode for 25 minutes on high pressure

Once the cooking time is complete, allow for a natural pressure release for 10 minutes, and then manually release any remaining pressure

Carefully open the lid and give the stew a gentle stir to combine all the ingredients

Serve hot, garnished with fresh herbs if desired

Homemade Spaghetti



Enjoy the simplicity and freshness of homemade spaghetti with a flavorful tomato sauce.

Ingredients:

  • 8 oz spaghetti noodles
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 can 14
  • 5 oz crushed tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish
  • Fresh basil leaves for garnish

Instructions:

Follow the directions on the package to cook the spaghetti noodles until they are al dente

Remove the water and set it aside

Warm up the olive oil in a big pan over medium-low heat

Add the minced garlic and cook until it smells good

Then add the dried oregano, dried basil, salt, and pepper

Mix the ingredients well

Let it cook for 10 minutes

Toss the cooked spaghetti in the pan with the sauce until it is well covered

Add grated Parmesan cheese and fresh basil leaves on top while the food is still hot
